I was trying to figure out what to prepare for dinner with beef sirloin and coconut milk and came up with my own recipe, thankfully it turned out yummy, so quick and easy to make!
Ingredients:
- 2 tbs. oil
- 1 1-2 tbs. of panang curry sauce
- 1 can of coconut milk
- 1 lb. sliced beef cut to 1 1/2″ pieces
- Handful of green beans cut in 1″ pieces
- 1/2 tomato cut in wedges
- 2 tsp. sugar
- 1 tsp. fish sauce
- 2 green onions sliced
- 1/4 cup cilantro chopped
Heat oil in pan on medium high, add panang and stir until dissolved and bubbly
Add 1/2 can of coconut milk, simmer for 2 minutes
Add the beef and green beans, stir, simmer for about 5 minutes until meat is cooked (don’t overcook the meat or it’ll be tough)
Stir in remaining coconut milk and tomato wedges
Add sugar and fish sauce, simmer another 2-3 minutes
Right before turning heat off, add the green onions and cilantro
Serve with rice. Makes 4 servings.
I served it with Thai Jasmine Brown Rice, trying to be a bit healthy
