Chicken with Cream of Mushroom Soup – Simple and Quick

If you’re looking to cook something quick with Chicken, you’ll like this one! This is a recipe I whipped up while trying to figure out what to cook for dinner one evening.  Little did I know that this Chicken with Cream of Mushroom Soup would be a hit with the family.  It is so simple and quick to throw together.


2 tbs. oil
3 Garlic Cloves minced
1 Onion Sliced
1 1/2-2 lbs. Chicken Pieces (legs, thighs, breast with bone and skin on)
Fresh sliced Ginger
2-3 Bay Leaves
1 Can of Cream of Mushroom Soup
1-1/2 Cups of Milk
2-3 Celery Stocks sliced
1 Cup Mushrooms sliced
Ground Pepper
1/2 Cup Cilantro coarsely chopped


Heat oil on medium heat in large pot, add garlic and onions until slightly softened
Add chicken pieces, cook until golden brown on both sides
Add ginger, bay leaves, cream of mushroom soup, and milk, stir well
Add celery and mushrooms, cover and reduce heat to medium-low until chicken is cooked, about 30 minutes
Season with black pepper then stir in cilantro before removing from heat.

Serves four
